5, Specificity: Colorless or white crystalline granule or  crystalline powder odorless; taste salty and cold, soluble in water, difficulty in ethanol; slightly deliquescence in moist air,PH7.5-9.0 in 5% aqueous solution, when heated to 150℃,it may lose crystal water.

6, Application: In the food industry as buffering agent, chelating agent, buttermilk nutritional supplement, emulsifier, flavoring agent. As an anticoagulant in the pharmaceutical industry and a preservative in syrup preparations. Such as in the cool drink can moderate the acidity of the citric acid, can prevent the rancidity of dairy products, for cheese, meat thickening agent, jelly, fruit juice gelling agent, cheese, ice cream emulsifier, stabilizer, etc.
